The Gift of Health
Praise is one of the best things you can do for your health.

I have so much to be thankful for everyday that I have taken to saying “I am blessed when people ask me how I am doing.” It is always true no matter how I feel otherwise I have a lot of blessings to count. Even if I have a day when I don’t feel good I can be thankful that most of the time I feel great.

If you take a little time today to count your blessings you might find you have a few things to be thankful for as well.

Choosing Wisely
I have dramatically changed my diet several times in my life. The first time was when I went off to school at 15 and started eating a lot more processed industrial foods. The second time was when I went to college, I had just watched my dad come through open heart surgery. I decided that it was something I never wanted to do. So I dropped most of the fats from my diet. I also changed the way that I ate because I had to purchase it myself. That first year I ate a lot of apples, peanut butter, and day old bread. I also ate other seasonal fruit but apples were the least expensive. Then I went off to work at Big Lake Youth Camp for the summer and ate 3000 to 5000 calories a day. I ate a full whatever was on the menu biscuits and gravy, pancakes, waffles, toast, french toast, cinnamon rolls plus a bowl of granola almost every morning. I ate two plates of what ever we had at lunch, and the same at supper. I love Friday night best because we had an Agape feast and sweet bread and fruit are one of my favorite things. I only could get away with this because I was teaching horsemanship and working very long days in the great out of doors.

I then went to Africa after my freshman year and had to prepare for 9 months in the bush. I remember oatmeal you dug out of a highly compressed can, processed meat substitutes, pasta, and flour for making bread. I was blessed by the other missionaries with fresh food once in a while and after about 6 months found my way to the local market with my students to buy fresh food. That was wonderful after so much canned food. My diet also flexed with roommate changes in college. I still ate lots of bread, peanut butter, fruit, a few nuts, seeds, and veggies.

My next major shift was recent because I picked up hepatitis A while on a trip to Africa. So then I got serious about foods that would restore my liver function and make me feel like a person again. So I for the last year have eaten the healthiest low sugar, very low processed food, high in greens and root veggies diet.
